Even better, homemade honey spoons complement both an upscale tea party for adults or a whimsical tea party for children. When combined with other ingredients and cooked, the honey sets up to a toffee-like consistency that melts when placed into the hot tea. Harden the honey onto plastic spoons or in decorative candy molds with lollipop sticks.

Step 1
Pour the honey, sugar, vinegar and water into the saucepan. Stir the ingredients to combine them.

Attach a candy thermometer to the saucepan. Position the sensor tip so that it doesn’t touch the pan itself but remains submerged in the honey mixture.

Turn the burner to “High” with the pan of honey mixture on it. Stir the mixture with a wooden spoon as it heats to a boil.

Wet a clean brush and use it to clean off the sides of the pan as the syrup cooks so that the mixture doesn’t crystallize onto the pan.

Reduce the heat so that the honey simmers gently. Cook the mixture until it reaches the hard-crack stage, which is equal to 300 to 310 degrees Fahrenheit on the candy thermometer. To check the stage beyond the temperature, drop a small spoonful of the mixture into a glass of cold water. If it is ready, the candy hardens instantly and is brittle.

Remove the honey mixture from the heat and place the pan into an ice bath for 10 to 15 seconds to stop its cooking. Stir the candy gently to remove air bubbles.

Spray the baking sheet or lollipop molds with cooking spray. For lollipop molds, lay the lollipop sticks in place.

Dip the spoons into the honey, ensuring that the bowl part of the spoon is covered and filled with the honey. Lay the spoons onto the greased baking sheet. If using molds, pour the honey mixture into the compartments about 2/3 full.

Sprinkle the hot honey mixture with slivers of lemon rind or mint leaves if desired.

Allow the honey to cool and harden. Remove the honey dippers from the lollipop molds if you used them.

Wrap the spoons with cellophane or place them into a decorative treat bag, and tie the wrapping shut with a ribbon for decoration.
